I Just Can't Hide It

I think I'm turning into my mom, and I think I like it.

I canned salsa today. By myself.

Well, first I grew the onions, the peppers, the tomatoes, and the tomatillos.

THEN I canned salsa. By myself.

Does it matter that I "cheated" and used the oven, because I don't have a canning kettle?

No. (because they all sealed, so hah!)

Does it matter that I was so distracted over not having any chips with which to taste it that I forgot about it, and let it boil for whoknowshowlong?

No.

Does it matter that I haven't tasted it yet, so I don't know if it is good or not (even the little jar I kept out for myself sealed on accident, and I just can't bring myself to break that little seal - plus, I don't have any chips, remember?)?

No.

Cause, dang it, I canned it by myself.

If it's not blue ribbon-worthy, too bad. I made it for Ty (cause I don't even LIKE canned salsa), and dag-nabbit, he's going to love it or die trying.

And if it's down-right gross, we'll just sit those jars on a shelf somewhere and admire them.

And feel comfort in the fact that if the world were to end tomorrow, we would survive for three days longer than everyone else. On salsa alone.

Now that I have canning whooped, next challenge: How to raise eight brilliant, hilarious, gorgeous children (pictured) out of only three...

First of all, where did you get that picture? Did you take some with your camera that day? What a bunch of weirdos.

Hey! I'm canning salsa today. Just put my first batch in the canner and my feet feel like they are going to fall off. I don't have any chips to test the salsa but I just taste a spoonful every now and again to make sure it's still o.k. I think I made enough for 30 pints. But I only have 21 jars so.... I might have to can some quarts. A quart of canned salsa just sounds ridiculous. But I think if I bought enough chips, it would get eaten.

I didn't know you could process jars in the oven.? Never heard of it.
Good job, Andy. Yer a good wife.

You are awesome. And, you and Shar look absolutely the most beautiful in that pic! I wish I was turning into your mom...or my mom. I've got a lot of years up on you and I haven't canned by myself yet. I don't even know how. (And I'm going to have to raise 8 great kids out of 3 too!!!!)---oh and get a garden.

I love this picture. It's classic. Plus, I've only ever canned stuff once, and I've never made salsa. You rock.

How do you leave a laugh as a comment...but my laugh isn't nearly so musical as the "Walker Aunts'" laugh.
